Here's another eggplant recipe
(I seriously love eggplants...the deep purple/bright green color combo is always gorgeous! It makes me happy when nature is artsy)
I adapted the recipe from carrotsncake.com
Eggplant Salsa Bake
Chop up:
one cute eggplant (WITH purple peel!)
one cute eggplant (WITH purple peel!)
1/2 an onion
Mix in a big bowl with 1/2 c. salsa (or as much as you want)
chopped garlic
Mix in 1 beaten egg, 1 T olive oil, salt, pepper, paprika, chili powder...(you get the idea)
Top it all off with some bread crumbs (toast bread then crush) and cheese!
Pour the mixture into a pan and bake at 350 degrees F for 40 minutes:

Verdict: baking casseroles with salsa is A GREAT IDEA!

And I had been doing so good with breaking my sundae-a-night habit for the past few weeks...
I can't resist anything Autumn Seasonal!
It is the best season for food.

I'm really going to have to try that eggplant recipe! I actually tried eggplant for the first time this summer!! (Eggplant from the farmer's market of course.) And I really like eggplant now...but I need some recipes for it!
